Introduction

Ingredients

    One 15.5 oz can Cannellini Beans (Bushs)
    Two 14.5 oz cans of Diced tomatoes (Fire roasted or seasoned)
    2/3 cup long grain brown rice
    seasoning to taste - basil, etc

Directions

Combine the ingredients - draining the cannellini beans, mix well, heat 3 -4 minutes on high, cover and simmer until rice is done.
Makes (4) 1 cup servings

    Very Good
    I was actually pleasantly surprised by how this tasted as I usually am not a big fan of "beans and rice ... rice and beans" dishes. I added a tablespoon of Season-All, increased the rice to approx. one and a half cups and also added a cup of water to compensate for the extra rice. Delish! - 10/17/11

    So glad to surprise you in a positive way. Since changing my lifestyle I've included more bean recipes in my general diet. Cooked correctly beans can be good - I couldn't stand any bean but green beans for years, now I buy them regularly!
