I made this because I wanted something hot and filling but also good for me when I was down with a sinus thing
6 CUPS BUTTERNUT SQUASH
¾ CUP ONION, CHOPPED
2 TBSP. FRESH CILANTRO
2 CUPS STRONG CHICKEN BOULLION
½ TSP. SALT
½ TSP. CUMIN
½ TSP. CURRY POWDER
1 CLOVE GARLIC
This recipe can be done in the Slow Cooker but also works well on the Stovetop.
Just throw pretty much every vegetable you've got into a bowl and voila!
This is similar to the s.p. recipie with a few additions. I think the addition of cabbage or red cabbage really makes this delicious.
Ingredients are approximate. Good low cal soup. If you add Shiratake Noodles they are only about 20 calories/ serving additional.
