I used a TON of sauce and cheese in this recipe...you can certainly cut down the calories by using fat free/reduced fat cheese, or by using only 1/2 cup of each the cheese and sauce. Also, baking the eggplant in the over as opposed to frying them will use far less olive oil (eggplant is very absorbent, so it sucks the olive oil up like a sponge, which is why I ended up using so much...)
Uses raw noodles, and is a real crowd pleaser. I used to use ground beef, regular cottage cheese, and Italian mix grated cheese, which really raised the fat content, and calories. Since bypass surgery, fat is not a tolerable thing so now I use ground turkey breast, non-fat cottage cheese, and skim mozzarella. The recipe was originally in a book that came with my first microwave back in 1981, both of which are long since gone, and I've put it together from memory.
