This works with any kind of zucchini or green summer squash, including a combination of squashes.
This low-carb lasagna uses zucchini "noodles" instead of lasagna noodles. The trick to making this work is to take some of the water out of the zucchini first by salting the "noodles". Then they firm up and are more noodle-like, instead of mushy. This recipe can be made with or without meat.
Childhood dish I loved. Mom made it on a weekend because of the time to boil the chicken and remove the meat.

I wanted a quick, cheap, easy alternative to tuna casserole and this fit the bill. This most likely would have been even better had it spent a few minutes under the broiler, or if I'd added capers and/or white wine, but I was aiming for quick and cheap and this was pretty tasty as it turned out.
