This Waldorf salad uses cranberry sauce in lieu of mayonaise, making it a lot healthier. I opted against the walnuts because I'm not a big fan.
Adding an eighth of a cup of broken walnuts would add 50 calories and 5 grams of fat per serving.
Also, if you want the creaminess of the mayo, add 2 Tablespoons of Miracle Whip Light for an additional 20 calories and 1.5g fat per serving.
a lighter, fruitier version of traditional Waldorf salad. I typically make this with nonfat plain yogurt flavored and thinned with fat free raspberry vinaigrette, but was out of plain yogurt and substituted with flavored yogurt, YUMM!
My really fussy 9 year-old LOVES this soup and begs me to make it whenever we have any leftover pumpkin or squash.

When I had to go gluten-free, i wondered how I'd live without pizza. This recipe gives me the taste in less than 15 minutes. Low in fat and much lower in sodium than regular pizza. You can use low fat or low sodium cheeses to reduce the numbers more.
A simple recipe that I came up with for lunch. I served it with steamed broccoli.
This is a refreshingly light egg salad. It is a 2 bread slice sandwich, thick & juicy! Works well on any type of bread.
I used a grinder with a blend of organic sugar & black peppercorn in place of salt & pepper.
