Introduction

When I had to go gluten-free, i wondered how I'd live without pizza. This recipe gives me the taste in less than 15 minutes. Low in fat and much lower in sodium than regular pizza. Ingredients

    1 Food for Life Brown Rice Torilla (I usually defrost it in the fridge for a few hours first.)

    4-5 tablespoons jarred tomato sauce (nutr. info is for Francesco Rinaldi No Salt Added Sauce)

    1/4 cup shredded cheese of your choice (I use double pizza cheese)

    1 thin slice cheese of your choice (I like to use provolone)

    3-4 teaspoons grated cheese

    herbs of your choice -- I use oregano and occasionally fresh basil

    toppings of your choice (not included in nutr. info--pizza in photo has sweet yellow peppers )

Directions

Preheat oven to 425. (If your oven's like mine and cooks cooler, set to 450).

Place tortilla on parchment paper on a cookie sheet. If it's still frozen or very damp, place in oven for 3-4 minutes to defrost, until it's pliable.

Place slice of cheese in the middle of the bare tortilla. This cheese will bake into the crust and help keep the cheese above from sliding off when it's hot. Using soup spoon, spoon sauce onto crust beginning in middle and working outward--use back of spoon to spread it. Leave about a quarter inch of bare crust on rim. Sprinkle the herbs onto the pizza. Sprinkle with grated cheese. Put on toppings. Sprinkle shredded cheese.

Bake for about 7 minutes, until the sauce and cheese bubbles. Let it cool a minute or 2, then cut into slices with pizza wheel or sharp knife.

Serving Size: 1 pizza. Serves one as a whole meal or can serve 2 as a snack.
