Awesome - I'd never used polenta before, and it took me awhile to actually find somewhere to buy a tube, but it was totally worth it. I added a poached egg to the top of each of the "rounds" as an easy mod for my protein-seeking husband, and doubled the spinach for extra greeny goodness. Yum!
