WOW!Okay so i replaced the skim milk with soy milk, used evaporated cane juice (natural sugar) instead of sugar, DUMPED cinnamon, used 2 medium eggs instead of egg beaters, and topped each muffin with a different topping (raisins, chia seeds, walnuts, and roasted sunflower kernels)....I'M IMPRESSED!
This is a great low-fat, tasty muffin. Good to have on hand for a quick breakfast or snack after a workout. Or if you feel like you want a "treat" its a good choice.
