I used half a sweet onion instead of scallions and 90-calorie So Delicious coconut milk beverage instead of buttermilk (it's what I had). I used fresh dill, mint, and a pinch of ginger. Came out amazing! Will definitely make again. Look forward to trying it w/buttermilk.
