Ingredients

    Peel, seed and coarsely chop 3 large cucumbers. Add with 1 container greek yogurt (low fat or non fat), 1 cup low fat buttermilk, a few scallions, loads of fresh mint, flat leaf parsley and any other fresh herbs you have (basil? dill?). Add a little lemon juice if you like. Toss in the blender, then in the fridge!

Makes about 4 1-cup servings.

    Incredible!
    I used half a sweet onion instead of scallions and 90-calorie So Delicious coconut milk beverage instead of buttermilk (it's what I had). I used fresh dill, mint, and a pinch of ginger. Came out amazing! Will definitely make again. Look forward to trying it w/buttermilk. - 8/3/11

    I actually found a similar recipe on Yoplait.com; it has almost the same ingredients. It sounds good to eat. I love the recipe because it is so easy to make. The only option I adding on the side is chicken breast strips. - 9/9/08
