Nutrition & Calorie Comments  

My husband is a very picky eater and when I fixed this the first time he only heard the word potatoes and tried it. He actually liked it. He was surprised when I told him it was cauliflower. I used cream cheese instead of sour cream and Bacos instead of chives & left out salt, pepper & garlic.
I came looking for a new cauli recipe. I used what I had on hand, low fat sour cream, 6 green onions, turkey bacon bits, 1/4 cup each asiago and parmesean cheeses; omitting the butter and garlic powder. We a thin bread crumb covering on top and sprayed lightly with butter flavor Pam.
I boiled the cauliflower in chicken broth ( 2 cans low sodium), 4 peeled garlic cloves, and some fresh rosemary, then followed the steps above! It was delicious. Cooking the garlic helped to mellow out the flavor a bit, but still great! I would highly suggest this to fellow dieters/ potato lovers!
I used Fat Free Sour cream and just a 2% shredded mexican blend (its all i had) I used a little bit more of each then called for. I didnt use any butter just cooking spray. I used chopped red onions instead of chives (again i didnt have any) and cooked up 3 strips of turkey bacon. YUMMMMM!!!!!
