We served this with some low fat sour cream and everyone loved it! As another poster said, it would be good stuffed in red or yellow peppers. Definitely a do-over at our house!
This was quite yummy! I used a full packet of taco seasoning and I only had half "regular" salsa so I used some peach salsa I had! Not bad! I served it with shredded 2% cheddar and lo fat sour cream. Will surely make this again!

Very good. I did not use any salt and used homemade salsa so I could control the salt and sugar there.
My kids gobbled this up, and my son went back for more. They ate theirs in reduced-fat tortillas with some sour cream and cheddar cheese. It was very filling! And yummy. I used a whole package of taco seasoning.
This sounds like it would make a fabulous stuffing for red, orange, yellow bell peppers-maybe a little red.fat shredded cheddar on top!
