Nutrition & Calorie Comments  

This sounds great, but something is off with the nutrition. The cheese is listed twice in the details which will alter things and you've got (I think) 1/4 of the ingred. there which makes it hard to understand.
Sounds good, I bet you could cut some calories by substituting reduced fat cheese, black beans, extra lean ground turkey, and corn tortillas.
Cotija cheese is a white semi hard cheese that is crumbled over food; the Mexican version of the Italian Parmesan. Any shredded cheese (non fat) could be used in if it was not available in your area.
But it does sound good and I will try it with the cheese substitution.
It's really 4 servings, so when you post it to your tracker, put .25 serving. The writer got it wrong in the nutrition list, but does tell in the recipe that it makes 4 servings.
What size tortillas are used? I know any would work, but it affect the servings and nutritional info.

I will have to give this a shot. Will possibly use turkey to cut down the fat.
This sounds great - try it with lean ground tturkey, or even ground chicken, fat-free vegetarian refried beans, low-fat cheese, low sodium taco seasoning, whole wheat tortillas, and salsa. Top with fat free sour cream & guacamole. Yum!!!
I wonder if we could cut the fat content by using either really lean ground turkey or beef.
