Nutrition & Calorie Comments  

So good! The ginger is sharp but the muffin is sweet & delicate. I used 1 white sweet potato and 1 yam. Also added 1/2 cup walnuts. Without the cooking time indicated, I slightly undercooked one batch and overcooked the next, but were still great. I eat with FF plain yogurt dusted w/vanilla sugar.
