Ingredients

    16 oz ground turkey, 93% lean
    1 cup tomato sauce
    1 cup corn
    1 tbsp chili powder
    1 cup onions, chopped
    2 cups fresh spinach
    1/4 cup mexican style taco cheese

Directions

Spray a large frying pan with cooking spray.
Add chopped onions and turkey. Stir until lightly browned. Add the tomato sauce, creamed corn and chili powder.
Add salt and pepper to taste. Cook on low heat for about 15 minutes.
Divide spinach between 4 plates and pour turkey mixture over the spinach. Sprinkle with cheese.

    I mixed the spinach into the turkey and cooked it a little. I also used frozen spinach and it was still good. My 14 yr old son (who loves spinach) had two helpings. - 3/13/07
