Ingredients

    5 cups shredded hash browns
    1 1/2 c. shredded cheese
    6 eggs
    1 1/2 c milk
    2 c diced lowfat ham
    preheat oven to 350. spray inside of 9x13 pan with nonstick spray. spread the hash browns in bottom of pan, next layer the ham, then cheese. mix together the eggs and milk. pour over top of hashbrowns. bake for 50-60 min. or until toothpick comes out clean.

    My son and I just put this together and threw it in the oven. It took us maybe 5 minutes. We will keep it and freeze it and see how it freezes for breakfasts for the week. We loved it. My son went back for seconds. - 1/13/10
