Introduction

Protein loaded, easy, and spicy! Protein loaded, easy, and spicy!
Number of Servings: 8

Ingredients

    1 pound turkey breast cutlets, boneless, skinless
    3/4 c sugar free blackberry preserves (I use Polaner)
    1/2 c reduced carb ketchup
    2 Tbsp red wine vinegar (I use Pompeian)
    1 tsp worcestershire sauce
    2 tsp chipotle chili powder (I use McCormick)
    dash salt
    cooking spray (I use Mazola)

Directions

Preheat oven to 350 degrees.


Lightly coat a 13 x 9 inch pan with cooking spray. Place turkey cutlets in pan, in a single layer.


In a medium bowl, combine the remaining ingredients. Pour resulting sauce evenly over turkey cutlets.


Bake for 1 hour or until Turkey is at safe and desired temperature.


Recipe makes 4 "regular people" servings or 8 "ladylike" half servings. It is calculated for 8 servings. (About 1/2 a turkey cutlet per person.)

NOTE!!!! This is a SPICY recipe!!! You may use less chipotle chili powder, regular chili powder, or no chili powder at all to get desired level of spiciness.


VERSATILE! This recipe also works with boneless pork chops and boneless skinless chicken. Even a combo of all 3 meats to please everyone. The leftover sauce can be used for any number of other quick throw-together meals that week. :)


This would probably do very well in a slow cooker at 8 hours on low. Throw the whole mess in and let her rip! I have not tried it yet, but I will next time!

    I used chicken breast instead since that was what I had on hand. Reduced the chipolte seasoning as we don't like real spicy. Tasted great and will try it on boneless pork chops next! - 5/29/21

    I made this recipe in the slow cooker. I threw the whole mess in and let her rip! I used chicken breasts, instead of turkey, just because that's what I had. It turned out like pulled pork - very moist and tasty! - 6/1/17

    This was good! I didn't have enough preserves so I added some honey. All I had was regular chili powder but I will definately look into chipotle chili powder because it wasn't quite spicy enough for me. I also threw in a red onion, red potatoes and cooked it in a crock pot. - 9/1/10

    I tasted this dish - made by PrairieHarpy herself! It's really good, especially if you like a little spicy-hot in your recipes. I could also see this being really good with Polaner's All Fruit Apricot preserves. Apricot blends nicely with the spiciness of the chilis. - 7/13/08
