Introduction

Turned out delicious! Only about 15 calories per mushroom, depending on how large of a mushrooom you use. The filling comes out firm even though it looks a bit runny as you are filling the caps. Ingredients

    12 white mushrooms (about 200 grams)
    6 oz Greek yogurt
    2 T Hormel bacon bits
    cooking spray
    salt to taste
    Tony Chacheres Original Creole seasoning to taste

Directions

Preheat oven to 450 degrees.

Hollow out mushroom caps slightly with a spoon--save a few of the stems and removed bits to add to the filling. Finely chop stems and removed bits. Spray a small skillet lightly with cooking spray, and put over medium heat. Heat mushrooms bits and bacon bits. Add a little water to keep from burning and to soften the ingredients a little. Add salt and creole seasoning to skillet and mix well.

Place yogurt in a mixing bowl, add ingredients from skillet. Mix well.

Spray a baking dish lightly with cooking spray. Place mushroom caps in baking dish, hollow side up. Divide yogurt mixture evenly among the mushroom caps. Bake at 450 degrees for 15minutes.
