Introduction

Ingredients

    • 2 cups cooked fettuccini
    • 12 oz. soft tofu, drained
    • 3 garlic cloves, minced
    • 1/4 cup grated parmesan cheese
    • 1/4 cup grated romano cheese
    • 1 tablespoon olive oil
    • 1 tablespoon onion powder
    • salt and pepper to taste

Directions

1. Cook the pasta according to the manufacturer’s instructions.



2. While the pasta is boiling, place the drained tofu, garlic, both cheeses, olive oil, and onion powder into a blender. Blend until smooth.



3. Pour soy mixture into a saucepan. Warm over medium heat, stirring occasionally.



4. Toss drained pasta with alfredo sauce.



Makes 4 servings.

    I'd never tried tofu before& was kind of skeptical, but this was very good! I halved the garlic & added about 6 oz. of frozen broccoli to the pasta as it was boiling. Served with a grilled pork loin - my husband went back for seconds and asked that I make this again. Not afraid to try tofu anymore. - 1/28/09

    Added spinach and a little bit of bacon. It was delicious - I like tofu but it didn't taste like it at all, so it's safe for tofu-phobics. I didn't miss the cream in the least! Cooking the garlic in the pan first like others suggested makes it even more fabulous. Will absolutely make again. - 9/7/10

    Really good! Hubby couldn't believe it was tofu - went back for 2nds! I accidentally put in several times the garlic required, but it tasted fine. I used the oil in the recipe to saute the garlic instead of blending it in w/ the tofu, then warmed the sauce with it in the same pan. Primo! - 2/5/10

    I roasted the garlic & added a can of evaporated milk to give it a more "cream" flavor. I put it all in the blender until perfectly smooth & then let the seasoned tofu/milk chill for a couple hours before dinner. My entire family *loved* it but the tofu is my secret. (haha!) - 10/22/09

    Wow. Who would have known! I cooked the garlic in the oil first before adding it to the rest of the ingredients. Only had parmesan cheese and added a Tbs. of Italian spices. I will be making this again! - 10/3/09

    This was really great. This was my first attempt with Tofu and I wasn't so sure what wouid happen - but it was awesome. It was very garlic-y. So next time, I would saute the garlic before adding it - that should make it sweeter and less pungent. Even my DH liked it after whinning about tofu. - 7/14/09

    I was so amazed at the consistency. I added a little soymilk like everyone said and it was awesome! I waited til after to tell my fiance. He loved it. I added a pack of frozen vegs (broc/col/carrots). I realy felt like I was cheating and having a healthy meal. - 11/14/07

    It tasted better the next day with some sea salt to knock out the slightly weird aftertaste of the tofu. I used whole wheat spaghetti instead of fettuccine and it made very large portions. - 5/16/09

    Sounds good - I'll have to try it with some chicken and added veggies. If you roast the garlic (don't peel first) in a pan, the bitterness goes away. Once you receive a few brown spots on the outside of the garlic - let it cool, then peel. - 5/6/09

    Several people are mentioning that they added milk or soy milk to make it less thick. I notice that step 3 of the recipe says to put "soy mixture" into a sauce pan. Was soy milk supposed to be an ingredient that was left out? - 2/27/09

    I was so happy with how this turned out! You can't tell it's made with Tofu, so kids eat it without any complaints. The only thing I did different was added non fat milk to thin it out a little and used whole wheat Penne Pasta. I would definetly make this again!! - 11/13/07

    Definitely a family favorite. My 6 yr old doesn't usually permit any sauce on her pasta - and thinks she doesn't like tofu. Both she and my husband loved this pasta. I added milk to thin the sauce, as well as some leftover smoked turkey and frozen green beans. Perfection! - 11/3/09

    I've never had tofu before and was a little nervous about this dish, but it turned out very well. I added some skim milk, because I couldn't get the sauce very smooth. I thought it would melt a little bit when heated, but it stayed with little chunks. It was good, though, and my bf even ate it!! - 11/3/08

    My kids won't eat anything but fettuccini alfredo is one of their favorite meals. I made this for the first time last night and they loved it. I even snuck in wheat noodles! I did add about an 1/8 of a cup more of parmesan and I used sea salt rather than regular salt. Wonderful! - 4/3/08

    This is really good, but I would roast the garlic a little next time...the raw taste comes across really strongly. I think I'll saute it in the oil and then add all that to the blender. But it sure tastes a lot unhealthier than it is! I also added peas. - 12/18/07

    based on the reviews, I think I'll be trying it this coming week..either over shirataki noodles, or spaghetti squash. I'm not sure if either of the local grocerys stores sell tofu! (I live in the country (!) - neither one carried lox!) I will probably add chicken and/or veggies either way! Thanks - 11/2/07

    I made this the other night and it was delicious. I only had firm tofu on hand so it was more like a spread, but I was serving it with veggies instead of pasta so it didn't matter too much. It was very flavorful. - 11/2/07

    I overcooked the sauce and it got a bit of a grainy texture. However, I tasted it before I did that and the consistency was perfect. Regardless of the consistency the taste of the sauce was excellent. I used barilla plus penne. The nutritional content is excellent. I think it would be good with vegs - 7/31/07

    i was pretty pleased! but it is too thick, when i heated the mixture, it was burning at the bottom of the saucepan, i added a little water but it wasn't enough. so i think adding some liquid will make it more sauce like but it was rich and good! - 7/31/07

    This was just so....cool! I already like tofu, but it was amazing that it didn't taste like it at all. I used garlic powder instead of onion powder, and added a little soy milk since people said it was thick, however, I used mine with spinach and cheese raviolis, so thick wasn't a problem.     My first tofu attempt turned out pretty good! My husband and I are definitely meat eaters, but tonight we ate this, and I made a side of veggies - broccoli, carrots, and snap peas.     The alfredo sauce was delicious and tasted almost exactly like the real thing. We added spinach and sweet peas to the sauce for some extra veggies. We also substituted garlic salt for the onion powder, which I would not recommend in the future - too salty. Still, it was a really delicious meal. - 7/27/12

    I used the Korean extra soft tofu that goes in sundobu soup, sauted the garlic, used only parmesan cheese and added some thinly sliced mushrooms that I microwaved first to remove some liquid. Processed the tofu and garlic in a food processor and it was super creamy. Delicious recipe! - 11/4/11

    Very good. I never would have thought to make a "sauce" out of tofu. I used an entire bulb of fresh garlic (we love garlic!)which I cooked in the oil first, a little skim milk, a tablespoon of reduced fat cream cheese, and a pound of asparagus which was added to pasta halfway through cooking.
