- 2 cups cooked fettuccini
- 12 oz. soft tofu, drained
- 3 garlic cloves, minced
- 1/4 cup grated parmesan cheese
- 1/4 cup grated romano cheese
- 1 tablespoon olive oil
- 1 tablespoon onion powder
- salt and pepper to taste
Directions
1. Cook the pasta according to the manufacturer’s instructions.
2. While the pasta is boiling, place the drained tofu, garlic, both cheeses, olive oil, and onion powder into a blender. Blend until smooth.
3. Pour soy mixture into a saucepan. Warm over medium heat, stirring occasionally.
4. Toss drained pasta with alfredo sauce.
Makes 4 servings.

I'd never tried tofu before& was kind of skeptical, but this was very good! I halved the garlic & added about 6 oz. of frozen broccoli to the pasta as it was boiling. Served with a grilled pork loin - my husband went back for seconds and asked that I make this again. Not afraid to try tofu anymore. - 1/28/09

Added spinach and a little bit of bacon. It was delicious - I like tofu but it didn't taste like it at all, so it's safe for tofu-phobics. I didn't miss the cream in the least! Cooking the garlic in the pan first like others suggested makes it even more fabulous. Will absolutely make again. - 9/7/10

This was really great. This was my first attempt with Tofu and I wasn't so sure what wouid happen - but it was awesome. It was very garlic-y. So next time, I would saute the garlic before adding it - that should make it sweeter and less pungent. Even my DH liked it after whinning about tofu. - 7/14/09

I've never had tofu before and was a little nervous about this dish, but it turned out very well. I added some skim milk, because I couldn't get the sauce very smooth. I thought it would melt a little bit when heated, but it stayed with little chunks. It was good, though, and my bf even ate it!! - 11/3/08

based on the reviews, I think I'll be trying it this coming week..either over shirataki noodles, or spaghetti squash. I'm not sure if either of the local grocerys stores sell tofu! (I live in the country (!) - neither one carried lox!) I will probably add chicken and/or veggies either way! Thanks - 11/2/07

I overcooked the sauce and it got a bit of a grainy texture. However, I tasted it before I did that and the consistency was perfect. Regardless of the consistency the taste of the sauce was excellent. I used barilla plus penne. The nutritional content is excellent. I think it would be good with vegs - 7/31/07

This was just so....cool! I already like tofu, but it was amazing that it didn't taste like it at all. I used garlic powder instead of onion powder, and added a little soy milk since people said it was thick, however, I used mine with spinach and cheese raviolis, so thick wasn't a problem. My first tofu attempt turned out pretty good! My husband and I are definitely meat eaters, but tonight we ate this, and I made a side of veggies - broccoli, carrots, and snap peas. I didn't add chicken, I did add more garlic cloves and a bit more cheese, but next time I'll make it as written. THX! - 3/28/07

The alfredo sauce was delicious and tasted almost exactly like the real thing. We added spinach and sweet peas to the sauce for some extra veggies. We also substituted garlic salt for the onion powder, which I would not recommend in the future - too salty. Still, it was a really delicious meal. - 7/27/12

Very good. I never would have thought to make a "sauce" out of tofu. I used an entire bulb of fresh garlic (we love garlic!)which I cooked in the oil first, a little skim milk, a tablespoon of reduced fat cream cheese, and a pound of asparagus which was added to pasta halfway through cooking.
