Ingredients

    1.5 lbs of grated Zucchini (or 3 cups)
    1/2 cup Onion, chopped
    1/2 cup grated Parmesan Cheese
    1/2 tsp Oregano
    1/4 tsp Pepper, black,
    2 cloves of Garlic minced
    1/2 cup Canola Oil
    4 Eggs
    1 Cup Heart Smart Bisquick mix

Directions

Shred the zucchini - 1.5lbs of zucchini
Grease or spray bottom and sides of a 13 x 9 pan
Mix all ingrediants together
Spread in pan
Bake at 350 degrees for 56 minutes until brown all over - cool and cut into 24 pieces - 4 rows by 6 rows

    Very good and easy. I used about a 1/3 cup blue cheese instead of all parmesan. Also I only used half the oil. (I used olive oil ) A couple of TBS bacon bits would a nice touch! - 4/24/16

    This is basically an "impossible pie" and easily adapted to other vegetables/fruits,herbes/spices. Omit oil. Good warm or cold. - 9/23/11

    I was just being lazy and I cut and pasted from the one section to enter all the ingredients into the other section where they have you list all the ingredients again - seems like a waste of time to me.... but I made it all nice/nice and pretty and more readable by cleaning it up.

    Ok, let me get this straight, because it sounds really good. I need to add 1 cup of Bisquick, and bake at 350 degrees, yes? Can this be made ahead and served cold, or does it need to be at least room temperature to taste good? Thanks! - 7/16/10

    It is really good warm, never tried it cold - finally figured out why I could not add the Bisquick - I put it in the first ingredients list for the calorie count, but left it off of the second list ;-)

    Yes - The recipe does need to cook at 350 degrees - The original recipe said to cook for 30 minutes but in my oven I had to cook it for 56 minutes to be brown all over and not underdone.

    Made it as a side dish to BLTs today and it did turn out fabulous - but since my husband is gluten free had to substitute Pamela's GF baking mix for the Bisquick.
