Ingredients

    peel 4 med to large potatoes or for a short cut use 2 cans of sliced potatoes but this adds sodium.
    4 slices of turkey bacon or Morning Star Bacon for Vegetarian
    1 tablespoon of flour
    2 tablespoons of sugar or sugar substitute
    1/3 cup of water
    1/4 cup of white wine vinegar
    1/4 cup diced onion
    1-tablespoon brown mustard
    1-teaspoon celery seed
    1-teaspoon paprika

Directions

If not using canned potatoes peel and boil potatoes until they can be forked. Then remove from water and cut the potatoes into slices. Place in bowl until later.
Fry the turkey or Morning Star bacon until browned remove from frying pan and crumble.
Melt 2 tablespoons of light butter and sauté the onions until tender. Add the tablespoon of flour and 2 tablespoons of sugar, stirring consistently. Add the celery seeds, water, and white wine vinegar; add the potato slices and the bacon. Heat through. Serves 4.

    I thought this was pretty good. It reminded me of the recipe my mother used to make when I was a child. It took some getting used to for the rest of the family. The vinegar kinda through them off. Still good. - 5/8/08
