Introduction

Fra diavolo style shrimp; terrific served with grilled vegetables. Fra diavolo style shrimp; terrific served with grilled vegetables.
Number of Servings: 6

Ingredients

    1-28 oz can crushed tomatoes
    1-1/2 lb peeled and deveined shrimp
    3 tbsp chopped basil
    3 tbsp chopped parsley
    1/2 cup pine nuts,toasted
    1/2 cup Parmesan cheese, grated
    1 medium vadalia onion, chopped
    3 cloves garlic, minced
    1 cup white wine (dry or sweet)
    2 tbsp red pepper flakes
    olive oil

Directions

Cook shrimp with 2 tbsp olive oil and red pepper flakes. Remove shrimp, set aside.
Add onion to pan and cook until soft and translucent.
Add garlic and cook until garlic softens.
Add tomatoes, wine, and pine nuts.
Cook 10 minutes.
Add remaining ingredients and cook an additional 2 minutes. Serve over pasta or grilled veggies.

    I made this tonight. Since I was only preparing for two, I used 2 fresh tomatoes instead of part of a can. I skipped the wine and it didn't seem to suffer. I thought the presentation lacked colour, so I threw a handful of baby spinach in at the last minute. Yum! - 4/22/09

    What a dish. Instead of the canned tomatoes I added fresh hot salsa I picked up from the deli at the grocery store and champaign vinegar. What a treat. - 5/17/09

    If this is supposed to be southern Italian, a more authentic version would be to omit the cheese and sprinkle with toasted or sauteed bread crumbs at the end. In my family, we never use cheese on seafood, and certainly not in "Fra Diavolo" dishes. - 4/21/09

    Yummy! If you are trying to save a few more calories, you can easily halve the oil and cheese. I recommend serving over whole wheat pasta. - 4/21/09

    Seems to be a yummy recipe, but I'm with Catfancier. I'm going to omit the cheese since cheese is traditionally not used on seafood pasta dishes. I like many of the other suggestions too - adding spinach, shallots, etc. Can't wait to try. - 6/5/10

    This was very good. I did not have some ingredients, such as the fresh herbs (substituted dried) and white wine. If I was doing this again I'd use the parmesan cheese on top of the shrimp rather than cooking it in with the sauce. - 8/13/10

    I would use vegetable broth instead of olive oil, I would not use the cheese or pasta, and would add another vegetable in place of the pasta. It sounds good, and I will try it my way. - 4/21/10

    Any suggestions for how to prepare the veggies, and what kinds work best? I like ww pasta, but prefer the veggies. Maybe I'll grill the shrimp and veggies on the bbq and skip the oil altogether. Maybe I'll put shrimp and veggies over brown rice. Guess that's a completely different recipe..lol. - 4/21/10
