Introduction
I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings! Ingredients

1 4-pack Pillsbury Country Biscuits (red or blue pack) *13 servings 2,000 calories*
3 cans Swanson Natural Goodness Chicken Broth
*6 cups 90 calories*
3 cans water
1 can Healthy Request Cream of Chicken 98% Fat Free (this is also low sodium) *1 can has 2.5, half cup servings or 1.25 cups*
1/2 cup skim milk *43 calories*
4 Chicken Breast halves (frozen) *520 calories*
Black pepper to taste
*Note I noticed that some comments mentioned that the calories were incorrect on this recipe, so I double checked, and when I enter the information I still get 284 calories per 1 cup serving. That is why I added the total calories for each ingredient next to the ingredient.
Directions
Makes about 10, 1 cup servings.
The 360 minutes of cooking time comes from using a crock pot to cook the chicken. (you don't have to do it this way)
In large pot (I use an 8qt.) Boil the chicken breasts in the chicken broth and water.
Remove the chicken when done and shred with 2 forks, add back to broth. Add cream of chicken soup and milk, then bring back to boil.
Cut the biscuits into smaller pieces(I use a pizza cutter) 4 or 6 per biscuit and stir gradually into boiling broth. Once all the biscuits are in the broth reduce heat and simmer about 25 minutes, stirring often.
Add black pepper as desired.
*Note to save some time before dinner you can also put the water, chicken and the chicken broth into the crockpot on low for 6 hours or so, then shred the chicken and tramsfer and the remaining broth/water into a large pot. You may need to add more broth or water if it cooks out while in the crock pot. Bring the broth to a rolling boil before adding dumplings (or you'll have a gummy mess) and once you begin adding dumplings stir very frequently. Once all dumplings are added, then cover and simmer on low.

I was pleased with this recipe; however, I modified it by leaving out the water and adding more broth, celery, sweet onions, garlic, and cream of mushroom. Flatten the biscuits and cut them into tiny pieces, slightly larger than oyster crackers. There was no gumminess and the family loved it. - 2/11/09

This recipe was very good! I did have trouble finding the buscuits and I was afraid to experiment with a different kind so I bought the ordinary buscuits and cooked them and served the chicken "mix" over top of it and it was a hit! My husband and two toddlers all had seconds...which is rare!!! GOOD! - 11/10/08

I entered all the ingredients I used in the quantities that I used. Everything is in the ingredent list. That total is also for a 1-cup serving. You could save the recipe to your nutrition tracker so you don't have to try entering ingredients separately.

This was really tasty. I added frozen mixed veggies & used Bisquick Healthy Request for the dumplings. After reading above I made them VERY small and flat (they get bigger) It was perfect. Sons favorite, use to buy this from freezer section & make in the crockpot @ $6 a pop (I would need 2). GREAT! - 2/4/10

I love this! I have always loved chicken and dumplings, and I this was a great recipe to follow!! Easy, inexpensive, and delicious! I did add fresh carrot, onion, and garlic as well as frozen peas and green giant mexican nibblet corn. I also added a half teaspoon of spicy brown mustard. Awesome!! - 1/18/10

Chicken and Dumplings are my fav since child hood
although we make the biscuits from scratch...It is just as good with the buscuits already made.

This was really great. I didn't have cr. of chicken, so I used cream of mushroom. I added some onions and carrots and even chopped up some jarred jalepenos for a little kick. I also did not have any refrigerated biscuits so I made my own "dumplings" from Jiffy baking mix. Will make again!!! - 5/5/09

So good and easy to make. I will make the dumplings way smaller next time, like the size of marbles because they puff up a lot. Leftovers for days! Oh yeah. I made it a second time and added celery, carrots, onion, thyme and oregano. Instead of the dumplings I used whole grain yolk free egg noodles - 5/19/16

This was so yummy! I'm still not sure I was really eating something healthy :) I made the recipe as stated but added some rotisserie chicken seasoning and some garlic granules to enhance the flavor towards the end of simmering. I wanted to let you know a easier way to fix Chicken and Dumplings. Boil two chicken breasts.In the freezer section, where they sell bisquits, you will see a package of strips, several in a package. Drop in your boiling water, depending how many you need. Right size and not too thick like bisq. - 10/31/12

This recipe tasted great! We've been trying a new recipe a day and this was our favorite so far! I used non-fat, low sodium broth with only 2 packs of biscuit dough and added peas, carrots and some celery salt. I cut the biscuits in sixths because they really expanded when you put them in the broth. - 5/3/12

My family always thinks it's a treat to get Chicken and Dumplings. The canned biscuits are my favorite for the dumplings. I made some the other night and didn't have canned biscuits so I used the refrigerated pie crust - not sure how much that ups the calories but it is fantastic for dumplings too - 12/17/11
