Introduction

I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings! Ingredients

    1 4-pack Pillsbury Country Biscuits (red or blue pack) *13 servings 2,000 calories*
    3 cans Swanson Natural Goodness Chicken Broth
    *6 cups 90 calories*
    3 cans water
    1 can Healthy Request Cream of Chicken 98% Fat Free (this is also low sodium) *1 can has 2.5, half cup servings or 1.25 cups*
    1/2 cup skim milk *43 calories*
    4 Chicken Breast halves (frozen) *520 calories*

    Black pepper to taste

    *Note I noticed that some comments mentioned that the calories were incorrect on this recipe, so I double checked, and when I enter the information I still get 284 calories per 1 cup serving. That is why I added the total calories for each ingredient next to the ingredient.

Directions

Makes about 10, 1 cup servings.


The 360 minutes of cooking time comes from using a crock pot to cook the chicken. (you don't have to do it this way)


In large pot (I use an 8qt.) Boil the chicken breasts in the chicken broth and water.


Remove the chicken when done and shred with 2 forks, add back to broth. Add cream of chicken soup and milk, then bring back to boil.
Cut the biscuits into smaller pieces(I use a pizza cutter) 4 or 6 per biscuit and stir gradually into boiling broth. Once all the biscuits are in the broth reduce heat and simmer about 25 minutes, stirring often.


Add black pepper as desired.


*Note to save some time before dinner you can also put the water, chicken and the chicken broth into the crockpot on low for 6 hours or so, then shred the chicken and tramsfer and the remaining broth/water into a large pot. You may need to add more broth or water if it cooks out while in the crock pot. Bring the broth to a rolling boil before adding dumplings (or you'll have a gummy mess) and once you begin adding dumplings stir very frequently. Once all dumplings are added, then cover and simmer on low.

    thanks for this wonderful recipe. I add chopped celery, carrots and parsely to the broth and use msg free chicken boullion, poulty season, garlic, salt and pepper for the broth. Also tear dough into tiny pieces to cook through. It thickens the broth too. :) - 1/16/09

    I was pleased with this recipe; however, I modified it by leaving out the water and adding more broth, celery, sweet onions, garlic, and cream of mushroom. Flatten the biscuits and cut them into tiny pieces, slightly larger than oyster crackers. There was no gumminess and the family loved it. - 2/11/09

    I thought that the broth/chicken was tasty but the biscuits turned gummy and chewy. I think i would make it again but just use Heart Healthy Bisquick and drop them in to cook. - 3/6/08

    This recipe was very good! I did have trouble finding the buscuits and I was afraid to experiment with a different kind so I bought the ordinary buscuits and cooked them and served the chicken "mix" over top of it and it was a hit! My husband and two toddlers all had seconds...which is rare!!! GOOD! - 11/10/08

    This was amazing! My boyfriend thought he was indulging on some high calorie, comfort food, when in reality we were eating healthy food! I used one box of the chicken broth instead of the three cans and didn't add any water, and it worked perfectly. I am totally making this again! - 1/7/08

    This was really tasty, but when I entered it in the recipe calculator, it came out to be 481 calories. How did you get 280? - 1/6/10

    I entered all the ingredients I used in the quantities that I used. Everything is in the ingredent list. That total is also for a 1-cup serving. You could save the recipe to your nutrition tracker so you don't have to try entering ingredients separately.

    We all loved it, My picky 16 year old, and my husband who was born and raised in West Virgina(meaning he has eaten alot of chicken and dumplings. I made it a litte healthier by subing the bisciuts with dumplings made with Bisquick and fat free milk. - 9/15/08

    This is my recipe...exactly! It is awesome. I make mine in a crock pot on low and from start to finish it takes about 4 1/2 hours. I love doing it this way because it makes the entire house smell. I have two picky teens and they love this. My son, the pickiest, always has seconds. - 10/14/09

    This was really tasty. I added frozen mixed veggies & used Bisquick Healthy Request for the dumplings. After reading above I made them VERY small and flat (they get bigger) It was perfect. Sons favorite, use to buy this from freezer section & make in the crockpot @ $6 a pop (I would need 2). GREAT! - 2/4/10

    I love chicken and dumpling and this is a great recipe. I have also used fat free tortila shells (Azteca are best) for the dumplings along with Campbell's Healthy Request cream of chicken and cream of celery soup and poultry seasoning - 5/5/09

    This recipe is awesome.. My family loved it! I will make this again. I'm from the South & I just have 2 say, 2 all the negative comments.. This is not a SOUP! Its supposed 2 B loaded w/ Chix & DUMPLINGS. The consistency should B thick. Make it how U want, but know what Ur talking about B4 U leave FB - 1/22/11

    I love this recipe and have made it several times and it's always a hit! It's so easy and delicious. The only modification is that I can only seem to fit 3 cans of the biscuits which seems to be plenty. I use a pizza cutter and get 6 pieces from each biscuit -- the smaller the better. - 1/22/11

    I love this! I have always loved chicken and dumplings, and I this was a great recipe to follow!! Easy, inexpensive, and delicious! I did add fresh carrot, onion, and garlic as well as frozen peas and green giant mexican nibblet corn. I also added a half teaspoon of spicy brown mustard. Awesome!! - 1/18/10

    Delicious. I loved that the recipe had exacts for my grocery shopping. I made this just as directed except for I did the simmering 10 minutes with the lid off, 10 minutes with the lid on...on medium heat. The dumplings were perfect. This was like my mom's...but better. - 9/13/10

    This was a great dish. Didn't take long and very filling! I actually added some broccoli, cauliflower, baby carrots, yellow squash and corn...lol...needed some veggies...and used only 3 cans of biscuit. It tasted so good! I wanted to eat more but was full after one bowl. ;o) - 9/22/09

    Chicken and Dumplings are my fav since child hood
    although we make the biscuits from scratch...It is just as good with the buscuits already made.
    Awesome job.... LOVE IT !!!! If you happen to come across any other recipies with chicken breasts please post again...

    This was really great. I didn't have cr. of chicken, so I used cream of mushroom. I added some onions and carrots and even chopped up some jarred jalepenos for a little kick. I also did not have any refrigerated biscuits so I made my own "dumplings" from Jiffy baking mix. Will make again!!! - 5/5/09

    OK, yuh-uhmmmm! I've never had chicken and dumplings before (not terribly popular in So Cal LOL), but my family and I loved it!! We'll be having this again soon!     So good and easy to make. I will make the dumplings way smaller next time, like the size of marbles because they puff up a lot. Leftovers for days! Oh yeah.     I used heartsmart bisquick instead of pillsbury bisquits. It was awesome. I never used cream of chicken, just used my own thickening like my grandmother used and this way it wasn't lumpy. ( I can't do thickeners well) - 1/18/13

    I wanted to let you know a easier way to fix Chicken and Dumplings. Boil two chicken breasts.In the freezer section, where they sell bisquits, you will see a package of strips, several in a package. Drop in your boiling water, depending how many you need.     I had never had chicken and dumplings before I tried this but it was quite good! The picky kids liked it but towards the end they got sick of the premade taste of the biscuits. I will serve it with lots of side dishes next time so they aren't as overwhelmed with the flavor. I liked it!! - 6/9/12

    This recipe tasted great! We've been trying a new recipe a day and this was our favorite so far! I used non-fat, low sodium broth with only 2 packs of biscuit dough and added peas, carrots and some celery salt.     This was my 1st attempt at homemade dinners. (I don't cook) It was AWESOME!! I only added 3 of the 4 cans of biscuts and it was enough,2 would have been enough.     I'm not sure what went wrong, but this had no flavor at all when I made it. Ended up adding sage, terragon, salt, garlic, and hot sauce to it. After all of that, the dumplings fell apart and it was just beige goo. - 4/1/11
