Number of Servings: 8

Ingredients

    1-1/2 cups red lentils
    1-2 jalapeno peppers, minced
    2 tsp tumeric
    8 cups water
    2 tbsp butter
    1 large onion, sliced
    salt to taste

Directions

Rinse lentils.
Place beans in large pot with 8 cups of water.
Add jalapeno, tumeric and salt to taste.
Bring to boil, then reduce heat and allow to simmer for up to 2 hours.
Melt butter in non stick frying pan.
Add sliced onion and saute' over medium low heat until onions are very soft and brown.
Top lentils with onion.
Serve with tortillas or other flatbread. Also good with brown rice.

    I pressure cooker cooked my lentils with less water and tumeric -to cook faster. I also added garlic, cilantro, cumin to the dish and used olive oil instead of butter. Tasty and healthy too!!! I also substituted jalapenos with fresh green chillies - minced. - 6/23/08

    This was really good. I substituted one of the teaspoons of turmeric for a teaspoon of garam masala, added a steamed head of cauliflower, and added 2 hot banana peppers in addition to the one Jalapeno. All of this served over brown rice. - 6/23/09

    Simple and quick. My red lentils are tiny, a bit bigger than a jalapeno seed and they cook quickly so cooked only 40 min. I added much less liquid to make it thick, and added garlic and ginger because it seemed like a good idea, I enjoyed the dish. - 7/10/13

    I added spices to my taste a little garlic and such was actually quite nice used a little ham soup base for added flavor and left out the the oil steamed a little onion for on top I think it was just as good and saved the fat - 6/23/08

    2 tbsp. o f butter for 8 (or more) servings is hardly unhealthy. I used the butter for flavour. Using a bit of butter is probably much healthier than all the chemicals that are in those butter flavour sprays.
