Introduction
If ever there was a kid-friendly recipe, this is it! My three boys love these—and my husbanddoes, too. Instead of opening a can, you can create your own sloppy joe sauce in no time. Dinner
will be on the table in less than 20 minutes—and our version has a quarter of the fat and 100 fewer
calories than a standard loose-meat sandwich.
I like to use whole-wheat sandwich thins instead of buns, but you can also serve this over a baked
potato. We like to serve this with sweet potato fries, a serving of green beans, and a cup of milk. If ever there was a kid-friendly recipe, this is it! My three boys love these—and my husband

Ingredients

1 1⁄2 cups no-salt-added tomato puree
One 14.5-ounce can red beans, rinsed
and drained
8 ounces ground beef, extra lean, at least
91% lean
1 medium onion, finely diced (1 cup)
3 cloves garlic, minced
1 cup finely diced red or orange bell
pepper
1 tsp chipotle or dark chili powder
1⁄2 tsp salt
1⁄4 tsp black pepper
2 tbsp canned chopped green chiles
4 whole-wheat sandwich thins, toasted

Directions
1. Place the tomato puree and beans in a
blender with 1⁄2 cup of water. Puree until most of
the mixture is blended. Set aside.
2. Place a large sauté pan over moderate heat.
When the pan is hot, add the beef, stir, and
cook until light brown.
3. Add the onions and continue to cook for 2
minutes, then add the garlic and peppers and
cook for 2 minutes more. Add the chili powder,
salt, and pepper; stir to distribute and cook for
1 minute more.
4. Add the tomato and bean mixture and the
green chiles to the beef, stir, and cook for an
additional 10 minutes. Divide the mixture evenly
among 4 sandwich thins.\

If your really looking to cut calories and have a great tasting sloppy joe with no muss and no fuss. You can use this same recipe and substitute Swansons 98% F/F Chicken Breast in the can. for the beef. I have used the chicken and tofu, no beans with salsa and make my own sauce for sloppy Joes. - 12/9/12
