Ingredients

    2 cups roasted chicken
    1 can low-soduim/lowfat chicken broth
    4 cubes soduim-free chicken bouillon
    6 cups water
    1 tsp dried basil
    1 tsp dried thyme
    1 1/2 cup chopped fresh parsley
    1 cup chopped carrots
    1 cup brown basmati rice (not cooked)
    1/2 cup chopped onion
    5 cloves garlic, chopped
    1 cup chopped tomatoes
    1 cup frozen peas
    1/2 cup each red, yellow, and orange bell pepper
    1/2 tsp. fresh ground pepper

Directions

Put all ingredients into a slow cooker and cook on high until done, 3 to 4 hours.

    Lovely! Just needed a little umph for us spice lovers, so I added 1 tsp of Carribean jerk. Spiced it up a bit. I may add a can of cilis instead, next time. GREAT recipe! - 1/6/09

    I thought this soup was pretty good. My family didnt like it, so I guess I wont make it again. :( Also, I really would like to know how big a serving size it. This made sooo much even dividing it into 6 was too much. What is the actual serving size plz. - 9/4/08

    Found this recipe easy to use I took fresh chicken breast and cut it in chunks and put it in since I was gone all day I cooked this on low for about10 hours and it worked out well - 8/17/08

    Definitions of roasted on the Web: * roast: (meat) cooked by dry heat in an oven. Soup is very good and easy. Roasted chicken from store is the easiest and tastier than canned chicken. - 8/17/08

    JIBBIE49,well the recipe did say ROASTED chicken. Typically,ROASTED chicken has been cooked. ROASTED=COOKED. usually the best place to get roasted chicken is to buy those whole roasted chickens they sell at the grocery store,then cut it up for this.I understand though,the logic w/4hrs in crockpot. - 8/17/08

    I used home made chicken stock, omitted the Broth and Bouillon Cubes, had no frozen peas, omitted those and substituted green pepper for the orange. I added one T of GEFRO Vegetarian Soup Granules. Tasted great. - 4/17/10
