Ingredients

    Zucchini, 1 large
    93% Lean Ground Beef, 1 lb
    Bread crumbs, dry, grated, plain,1/2 cup
    Onions, raw, 1/2 small
    Garlic, 1 clove minced
    Romano Cheese, 2 oz grated
    Basil, 3 large leaves crushed
    Egg, fresh, 1 large
    Salt, 1/2 tsp
    Pepper, black, 1/2 tsp
    Garlic powder, 1/2 tsp
    Sauce:
    Crushed Tomatoes, 28 oz. can
    Onions, raw, 1 medium chopped
    Olive Oil, 2 tbsp
    Oregano, ground, 1/4 tsp
    Basil, .1 tsp
    Granulated Sugar, 1 tsp
    Garlic powder, 1/4 tsp
    Parmesan Cheese, shredded, 2 tbsp

Directions

Cut the ends off the zucchini and cut into 3 pieces. Put them into lightly salted boiling water and cook for 5 minutes. Cut each piece in half and scoop out seeds and set in a greased baking pan that will hold the pieces flat on the bottom.
Heat 2 tbsp oil in a skillet and saute the onion and garlic for 3 minutes. Place the bread crumbs , cheese, basil, egg, pepper and salt in a bowl. Mix well and combine with onion and ground beef. Mix well and shape into 6 pieces that will fit inside of zucchini. Bake for 25 minutes in a 400 degree oven.
Meanwhile, heat another 2 tbsp. oil in a skillet and add garlic and onion. Cook for 3 minutes. Add tomatoes adn all the spices. Cook for 30 minutes.
When done, pour sauce over the stuffed zucchini and bake another 10 minutes. Sprinkle with cheese.
Makes 6 servings.

    This was so yummy. My husband even liked it and he's not a zucchini fan. I made it w/both zucchini & eggplant. Both were very good, but I think the eggplant was even more tasty!! Thanks! - 9/7/08
