Ingredients

    1 head Belgian endive, trimmed
    1 apple, cored and cut into 1/2-inch dice
    1/4 cup Swiss cheese, cut into 1/2-inch dice
    1/4 cup chopped walnuts, toasted
    snipped fresh chives

    For the vinaigrette:
    2 Tbsp. rice wine vinegar
    1 Tbsp. canola oil
    1 Tbsp. extra-virgin olive oil
    Pinch of sugar
    Pinch of salt

Directions

Serves 2.

Cut endive in quarters lengthwise, then slice crosswise into 1/2-inch pieces. In a medium bowl, toss toss endive, apple, walnuts and Swiss cheese.

In a lidded jar, add vinaigrette ingredients; cover and shake briskly to combine.

Drizzle vinaigrette over salad to taste; toss gently. Add snipped fresh chives and several grinds of fresh cracked pepper.

    This is a GREAT salad however, it looks like the 2T of oil was left out of the calculations; adding it back in means that each serving is approx 365 cal and 28 fat :( - 1/4/13

    I made this for lunch today. It's excellent! Next time, I will cut the oil and vinegar in half for the salad as listed. I used Colby Jack cheese because I didn't have swiss cheese. - 1/15/13

    This looks wonderful. Have shared the recipe with my caterer husband. He uses endive leaves whole and fills them with walnuts and gorgonzola and drizzled balsamic vinegar. Makes a nice finger food for parties. No need for a fork. I think these ingredients will be nice to try. - 1/5/13

    Looks good , this can also be made with Cider Vinegar , but cut back to a tsp. and replace sugar with brown sugar , II slice raddish, and add a touch of Cinnamon. I leave the Apple seeds in the salad , yep number one Cancer prevention (apple seeds , Ty Bollinger , Cancer - Think Outside The Box) - 1/1/13
