Ingredients

    1/3 cup old fashioned oats (or 1/6 oat bran and 1/6 dry oats)
    1/3 cup egg whites
    2 tablespoons Greek yogurt (vanilla chobani is super yummy for this)
    1/2 teaspoon baking powder
    1/2 teaspoon vanilla

Directions

this recipe makes a single serving pancake. it's rather large, so you may want to divide your pancake batter just to avoid breaking your whole pancake!

cook on a greased medium sized skilled for about three minutes. flip over and cook for two minutes. tastes excellent with cinnamon, fresh fruit, and maple syrup.

    Incredible!
    This makes a great pancake. The addition of yogurt gives it more lightness I think. Makes a nice big serving so it gives that feeling that you are eating a lot, without a lot of calories, and nutritious to boot. Thank you. - 4/3/17

    I am making these 2-3 times a week now. It really helps that I have a Vitamax blender. I've substituted cottage cheese for yogurt on occasion - works well.

    2Tblsp real maple syrup (15 sec in the microwave to heat) + fruit on top of these = fantastic!!!!!

    No flavor. I added 1/4 tsp cinnamon. Maybe I'll try adding Stevia for a little sweet if I try again. - 1/28/12

    Incredible!
    I made 2 pancakes with 1/3 cup egg beaters instead of whites, and added 1/4 tsp of cinnamon. Ate them with 1/4 cup of sugar free maple syrup. They cook very fast and they are tasty! Will have it often! - 12/16/11

    This is so very good! I used regular plain yogurt instead of greek. I also doubled the recipe so my boyfriend could partake in eating breakfast. (He enjoyed these too!) For one serving it is easiest to make 2 small sized pancakes (instead of one big one). Use 1/3 cup per pancake, works out perfectly - 3/2/11

    LOVED ITI i went ahead and used the whole egg, and i didnt have vanilla extract so I added some cinnamon. For a topping i used some raspberry puree, but this would be good with any fruit. I even liked them just plain, made 3 small pancakes instead of one big one. very easy/quick to make! - 10/13/10
