Number of Servings: 16

Ingredients

    22oz Ground Turkey (15% fat)
    1 tsp olive oil
    1 1/2 tsp basil leaves (dried)
    1 1/2 tsp black pepper
    1 tsp Kosher salt
    1/4 tsp thyme
    2 cloves garlic (minced)
    2 cans of tomato sauce (15oz)
    1 can diced tomatoes (15oz)
    1 - 2lb bag frozen mixed vegetables
    1 can green beans (15oz)
    1 onion - chopped
    1 large potato (peeled and diced)
    water - to cover all

Directions

1- In a large dutch oven, brown turkey with garlic and onions.
2 - add everything else and cook over medium heat until it starts bubbling. Reduce heat to simmer and cover. Stir occasionally.
3- I like to leave my soup simmer/low for several hours to a whole day.
