Ingredients

240 g Chicken breast (that's 2 smaller breasts)
5 TBSP Nonfat Sour Cream
2 TBSP Mayonnaise
1 tsp Curry Powder
2 TBSP Pineapple Juice from can
Salt to taste
1 cup Pineapple Chunks (canned in its own juice)
1 can Mandarin Oranges (optional)
Some Lettuce
1 TBSP toasted Almond slices (optional)
Directions
Cook chicken breast in a little water until done.
Let cool and cut into cubes.
In a bowl mix the Sour Cream, Mayo, Curry Powder and about 2 TBSP of the Pineapple juice from the canned pineapples. Add a little salt to taste. Add the chicken, pineapple chunks and the mandarines and toss.
Serve over some lettuce and sprinkle with toasted almonds.
Serves 2 generously

I love chicken salad from the deli and never thought I would find a healthy version that was just as good! I added some onions and skipped the walnuts and oranges ( don't like). I think that this one is definitely worth playing around with. Would probably taste good with olives and tomatoes as well - 9/21/07

I used thighs instead of breasts; no mayo, only sour cream. And I added some corn since the meal was going to include no other grains; also added chopped chives, some turmeric, & extra curry powder. Took it to new parents (my turn on the Meal Train) & they loved it! There's still some left for me. - 8/30/17

I have not made this but am absolutely sure I'll love it. I'll send in my rating as soon as I make it. I'm wondering whether raisins would be good with it? I'll make it as suggested the first time and then experiment. I probably won't have to though. It sounds great I made this (no raisins needed) - 8/5/07
