Ingredients

3 medium chicken breasts
2 cups onions, sliced
2 tsp paprika
2 tsp salt
2 tsp cumin
3 cloves garlic, minced
corn tortillas
2-1/2 tbsp olive oil
Directions
Heat oil on medium high and cook onions until browned.
Chop the chicken breasts into small, bite-sized pieces and add to onions.
Season with paprika, salt and cumin, making sure the chicken and onions are evenly coated. Cook until chicken is browned but tender.
Add minced garlic and cook for approximately 1 more minute. Reduce heat to low.
Heat another skillet and add one or two tortillas, depending on how big the skillet is. Heat until tortilla is lightly browned on each side.
Serve with sour cream, salsa, guacamole and/or hot sauce. Enjoy!!!

I used 3.2 oz of the chicken mixture and 1 T. salsa for each tortillas and it makes 10 servings of 1 tortilla each. I deleted the salt totally, not needed for people with HBP. We need better tasting corn tortillas in our area, otherwise it was very good. Wonder if you could add green peppers, etc - 4/11/09

I will rate after I try this - probably tomorrow. I use premium canned chick, too, that we get at our Sam's club. I also have some little pepper streak slices in the freezer so I can try it beef style. Just hafta go get the cumin and WHOLE WHEAT tortillas that I'll nuke to soften between paper towel - 3/5/11

I would omit the salt, reduce the chicken and oil by at least half or just spray or spritz the pan with olive oil, add green pepper strips, and simmer all in about 1/2 c of beer. Use whole wheat tortillas as the wrap, top with shredded lettuce, salsa,and low fat Sargento's 4 cheese mexican cheese. - 3/5/11
