Introduction
Because I cut out half the sugar of a "normal" recipe, this bread is not as sweet as others. It's good enough for me and I prefer the calories in my recipe over others like it. Ingredients

3 eggs, beaten
1 C applesauce, all-natural, no sugar added
3 tsp vanilla extract
1 3/4 C sugar
2 C shredded zucchini
2 C whole-wheat flour
1 C all-purpose flour
1 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1 tbsp cinnamon
1 pint blueberries.
Directions
Preheat oven to 350°.
Mix all ingredients, EXCEPT blueberries in a bowl. When everything is moistened and mixed well, fold in the blueberries.
Place in oven and bake for 45-50 minutes.
This recipe makes 2 9-inch long loaves. The nutrition count is for 15 slices per loaf.
