Introduction

A twist on the classic BLT--substitute lettuce with thyme! A twist on the classic BLT--substitute lettuce with thyme!

Ingredients

    4 slices bacon, cooked
    2 chicken breasts, boneless, skinless
    1 tbsp olive oil
    1 clove garlic, minced
    1 tbsp chopped red onion
    2-1/4 inch sliced tomato

Directions

Place bacon slices on a sheet pan and bake in a preheated 400*F oven for about 10 minutes until half cooked.
Remove and reserve.
Working on a sheet pan, coat the chicken breast with olive oil and garlic.
Sprinkle lightly with salt and pepper.
Next, wrap 2 pieces of bacon strips criss cross around each piece of chicken forming an "X' pattern in the center. Sprinkle with the diced onion and place a thick slice of tomato and a couple sprigs of fresh thyme in the center of each breast, tucked under the bacon.
Bake until chicken is completely cooked and reaches an internal temperature of 165*F, about 30 minutes.

    Very good! If you turn the temperature of oven down to 325 and bake for 45 mins. chicken will stay jucier - 7/18/09

    Very much like my own recipe, except I brine the chicken breasts overnight in salt/sugar/wine/water to cover. This prevents the chicken from drying out. If I have some thin asparagus spears, I will wrap them up in there too! - 2/2/09

    This recipe was pretty easy & that is what I look for...tasty & easy. I replace thyme with cilantro for zest. I made a salsa mix from the tomatoe, onion & cilantro by placing in my food processor. It turned out pretty good. - 7/9/08

    made this tonight and my husband and I loved it. I didn't have any thyme, so I used oregano instead. Instead of adding olive oil, I rolled the chicken in the bacon drippings that were left after cooking the bacon for 10 minutes. Thanks for this great recipe! - 6/2/08

    I am someone that can never get my chicken to stay moist and tender. I made this with one variation,I kept the bottom of my pan coated with the extra bacon under the chicken. I also only cooked for 25 minutes. It was the best chicken I have ever eaten. Great recipe. Thanks. - 8/17/10

    I haven't tried this yet, but have a suggestion to prevent dry chicken. I never thaw chicken before baking it. 1 hour at 350 and the chicken stays very, very moist. I use spray olive oil and seasonings will stick to the chicken. A little water in the bottom of the pain to make clean up easier. - 1/27/10

    This was delicious! I pounded the chicken slightly to make it more even for cooking. After reading the reviews, I baked it at 350degrees..it reached the proper internal temp in 17 minutes and was still quite moist. Served on whole wheat sandwich thins with some fruit - will definitely make again. - 2/1/12

    I cook chicken with skin on in the oven on a grill rack with water in bottom of pan which keeps in the moisture of the chicken then I cook bacon under grill which gets rid of excess fat. To serve remove skin from chicken , arrange bacon on top and garnish with tomato and chopped sage - 2/3/11

    Another hit! I didn't have any bacon or thyme so used prosciutto and sage. Baked it on a bed of sliced, roasted garlic adding chicken broth to pan for moisture. Put under broiler last few minutes to brown and crisp. Delightful! Thanks. - 1/31/11
