Ingredients

    1 cup rolled oats
    1 cup milk
    2 cup flour
    1/2 cup sugar
    5 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1/2 cup margarine, melted and cooled
    2 eggs
    2 tsp vanilla
    2 cup bananas mashed (4-5)
    1/2 cup chocolate chips

Directions

1. Combine oats and milk. Set aside.
2. In a large bowl, mix flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg.
3. To soaked mixture, add melted margarine, eggs, vanilla and bananas.
4. Add wet mixture and chocolate chips to dry ingredients and stir only until flour is moistened.
5. Fill greased muffin cups and bake at 375 degrees F for 20 minutes.

Makes 24 muffins.

    YUM! I substituted whole wheat flour and applesauce for the margarine, some of the best muffins I've made - love the cinnamon and nutmeg, although next time will prob add a bit less nutmeg, just not my personal favourite. I only had 2 bananas on hand, so that's all I used. Hubby loves them too! - 1/8/12

    Sooooo yummy!!! I only made a couple of adjustments....I used brown sugar instead of white and used coconut oil instead of margarine, and less of it and added 1/3 c. flax seed meal......definitely a keeper recipe! Thank you! - 6/19/11

    Easy to make and smelled super! I tweaked it quite a bit though and brought the calorie count down to 116.1. I used fat free milk, whole wheat flour, and splenda I also added about a half cup more mashed banana. YUMMY! 3 star rating is for the recipe as is cuz I thought the calories were too high - 3/20/08
