This soup truly is a lifesaver for busy families! On days that we are occupied with homework
and sports until dinnertime, I can mix this together in a flash and put everything in the slow cooker
before picking the boys up from school. When we arrive home at dinner time, there’s a warm meal
waiting for us to enjoy.
If I am making this soup in the spring or summer, lemon is a great way to finish the soup; when
it is cold outside I reach for the hot sauce! f/v 2

Ingredients

1 onion, finely diced
One 14.5-ounce can diced tomatoes, juice
included
One 6-ounce can tomato paste
1⁄2 cup diced celery
2 cups shredded carrots
1 cup brown lentils
1 tbsp Italian Herb Seasoning
1⁄2 lemon, juiced, or 3 drops hot sauce
Directions
1. Place the onion, tomatoes, tomato paste,
celery, carrots, lentils, and herb seasoning in
the slow cooker. Add 5 cups water.
2. Set the cooker on low and slow cook for 4
hours. Just before serving add a squeeze of
lemon juice or a few drops of hot sauce to the
soup.

This was very good. I changed two things, added some salt and I had to cook it longer. It took longer than 4 hours on high in my crockpot (which is normally fine with recipes), so I'd plan for about another hour. Also different colors of lentils have different cooking times so watch out for that. - 9/20/12
