Ingredients

    2 cups Almonds, whole
    1/4 cup Flax Seed Meal (ground flax)
    25 grams or 1/2 cupCoconut, unsweetened
    6 scoops Whey Protein, vanilla
    1/3 cup Almond Butter
    1/2 tsp sea salt
    1/2 cup coconut oil
    1/4 cup + 1/4 cup STEVIVA blend, or dash of stevia powder or drops
    100 grams dark chocolate (I used 90% and added the 1/4 cup steviva)

Directions

Place almonds, flax meal, shredded coconut, whey powder, almond butter, and salt in a food processor. Pulse briefly, about 10 seconds. In a small sauce pan, melt coconut oil over very low heat.


Remove coconut oil from stove; stir in steviva blend or stevia


Add coconut oil mixture to food processor and pulse until ingredients form a course paste.


Press mixture into a 9x13 glass baking dish oiled with coconut oil to reduce sticking.


Chill in refrigerator for 1 hour, until mixture hardens.


In a double boiler, melt chocolate, stirring in remaining stevia. Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens. Remove from refrigerator, cut into bars, and serve. YUM!

    These were delicious! I altered it slightly (xylitol instead of stevia and 4 scoops protein powder), but over a great, easy recipe! - 2/25/12
