Number of Servings: 4

Ingredients

    4 medium baking potatoes
    1 cup prepared shredded BBQ pork
    1 cup shredded low fat cheddar cheese
    4 tbsp low fat sour cream

Directions

Split open warm baked potatoes.
Heat shredded pork bbq in a pan.
Add 1/4 cup shredded cheese to each potato.
Add 1/4 cup hot shredded pork bbq to each potato.
Top each with 1 tbsp low fat sour cream and enjoy.

    This is a common way to have bbq in the South where I'm from originally. There are several bbq restaurants that served bbq stuffed potatoes. I wish they used the lowfat sour cream and cheese! - 9/10/08

    In Memphis, this is known as an "Idaho Pig." I used to get this all the time. Once in a while would be okay, but potatoes digest a little too fast for me to eat them often. Like other starches, they'll make your blood sugar spike. - 11/1/09

    Super easy & quick! The potatoes baked while I was working out. I used ready made Lloyd's BBQ pork w/just a pinch of cheese & omitted the sour cream. My husband turned up his nose at first but once he tasted it he was won over. Very good. I would never have thought of this on my own. Thanks! - 1/5/11

    Way too salty, didn't care for the packaged bbq named in ingredients at all. We threw it away. Also ingredients listed in calories by ingredient list Lloyd's CHICKEN, not pork as the recipe is named. - 11/1/09
