Introduction

Ingredients

    1 acorn squash
    2 apples, chopped
    1/4 cup brown sugar
    1 tablespoon margarine, melted

Directions

Preheat oven to 350 deg F and either grease a cookie pan or cover it with tin foil.

Mix together the chopped apples, brown sugar, and melted margarine. Set aside.

Cut the squash in half and scoop out the seeds. Place the squash cut side down on the prepared pan and bake for 25 minutes.

Turn squash right side up and fill each half with apple mixture. Bake for another 20 minutes, or until the squash is tender.

For extra flavor, add 1/4 cup chopped walnuts to apple mixture (nutritional info does not include walnuts).

    Great recipe! I only used 1 apple and 2T Splenda brown sugar blend and 1T Land O'Lakes light butter. It knocked the calorie count down but it's still great. I also was in at ime pinch so I microwaved the squash for 4 minutes and then added the apples and microwaved for another 4. Really great! - 9/16/08

    I added dates and sunflower seeds ( a nut mix I had at the back of the cupboard) and some nutritional yeast (for extra B-vitamins and buttery flavor) and this recipe was awesome. - 11/8/09

    This is terrific! I was in a hurry, so I microwaved the squash for 7 minutes, then baked it in the oven with the apples for 30 minutes. I also added some spice to the apple mixture. If fat and calories weren't an issue I'd double the sugar and butter, but it's really sweet enough as is! - 10/27/09

    delicous! i didnt add brown sugar to lower the calories, but put a package of splenda and added walnuts with the apples and put a low calorie syrup on top when it was finished. Mmmmm thanks for sharing! - 5/8/10

    I just cooked this tonight. Microwaved the squash 7 minutes per the comments above, and baked with the mixture in them for 40 minutes, and the squash needed all of that. Added 1 tablespoon of cinnamon and a couple tablespoons of finely grated walnuts to the mixture. Diced apples fine. Fabulous! - 2/8/10

    I've never had acorn squash before, but really enjoyed this dish. I made it as my contribution to a dinner party and everyone said it was one of the best acorn squash recipes they'd tasted. It's easy to make and doesn't take too much prep time at all. I can't wait to try it again! - 2/22/10

    this sounds good...kind of reminds me of that one rachel ray rec. that she just had the oatmeal, golden raisons, apples and baked them in the oven. i think there was brown sugar too i cant remember......this does sound good. - 3/5/08

    This is a terrific recipe! I did notice that I did not need nearly as much stuffing as the recipe calls for; maybe my squash are small? Anyway, I put the rest of the stuffing in a small pan and baked it alongside of the squash, and it made a delicious apple treat for later. - 1/23/08

    Love this....it is a great dessert. I used real butter and instead of using brown sugar I used splenda. I imagine it would be better with the brown sugar, but I was out. - 11/25/07

    This was REALLY yummy. Even my boyfriend who "doesn't eat squash" enjoyed it. I also added some cinnamon to the apple mix and sprinkled it over the squash before baking it the second time. - 9/28/09

    Delicious and easy! I skipped the butter, substituted maple syrup for the sugar, and added raisins and cinnamon/ginger. Very easy and very yummy :) My apples were very large - I only needed a third of one. It's easy to bake the rest on the side as an extra treat. - 11/6/11

    a little strange texture-wise for me, and also I think I prefer my squash a little more simple -- just a dash of salt/pepper and cinnamon or nutmeg works great for me. It was a good way to get some extra fruit in, though. - 11/7/10

    Per reading the other reviews - I started by putting this into the microwave for about 3 mins to soften it before trying to cut it in two - I used light Butter and added about an 1/8 cup of quick oats and pumpkin pie spice and cinnamon to the apples - I thought it turned out really good ;-) - 10/26/10

    I added ½ cup of oatmeal, 2 tsps of cinnamon and ¼ cup of raisins to the center mixture. Instead of the full serving of brown sugar, I only used half and then used splenda for the other half. My kids, mother and I all ate it and it was great! I am going to make this again! - 9/29/10
