Ingredients

    2 acorn squash
    1/4 cup honey
    1/4 cup orange juice
    1 tsp ground ginger

Directions

1. Preheat oven to 400 degrees.
2. Slice top & bottom from each squash & discard.
3. Carefully slice each squash into four rings, makes eight rings in all.
4. Remove seeds from center of rings & discard.
5. Lay rings on a cookie sheet & bake for 15 minutes.
6. Combine honey, orange juice and ginger in a small bowl.
7. Brush squash rings with marinade.
8. Bake another 15 minutes.
9. Brush with marinade again.
10. Bake 10 more minutes, or until tender.

Makes 4 servings of 2 rings each.

    Very Good
    I liked the flavor combination, though I'll put a little less ginger in next time so it doesn't overpower everything else. It's also very pretty and has easy to serve small portions, so it's coming along to Thanksgiving dinner at my friend's house this year. - 11/20/12
