Introduction

This rice is a healthier substitute for the typical high fat, high calorie fried rice we all know and used to love! This rice is a healthier substitute for the typical high fat, high calorie fried rice we all know and used to love!
Number of Servings: 8

Ingredients

    2 c. Brown Rice, cooked
    1/2 c. Egg Beaters
    8 Baby Carrots, chopped
    1 Celery Stalk, chopped
    1 Small Onion, chopped
    1/2 c. Frozen Peas
    1/2 c. Frozen Corn
    2 Tbsp. Light Soy Sauce
    Water (as needed)

Directions

The 60 minute cooking time includes the 45 mins. needed to cook the brown rice.

In a wok, or large frying pan heated to medium heat, cook the egg beaters thoroughly. Remove from pan and set aside. Add the carrots, celery and onion. Cook over high heat (stir fry) adding as much water as needed until the vegetables are tender. Cut the egg beaters into chunks and add it to the vegetables, along with the peas and the corn. Add the rice and soy sauce and mix all the ingredients. Continue cooking just until heated through.

Yields 8 servings of 1/2 cup each.

    This is a very good recipe. I added about 1/2 tsp of ground ginger to it for a little added spice. It was very good! I will definitely make it again. - 8/26/11

    Made this to go with HealthierLynn's Crockpot Orange Chicken. I used Success Boil-In-Bag brown rice, left out the corn, & added an extra tablespoon of soy sauce. Tasted great! - 6/28/11

    I usually make a large pot of rice ahead of time and keep it in the fridge. This way, you can make this recipe in 20 minutes or less. - 1/20/11

    I got precooked rice from a chinese takeout place since older rice works better than freshly cooked rice for stir fry. Also used frozen peas, corn, and onion. I made this to accompany the "Honey Garlic Pork Chops" - another SP recipe. They were fabulous together! - 1/8/08
