Introduction

Tuna noodle casserole without the tuna. Use chicken leftovers or substitute turkey for chicken and use after Thanksgiving with some leftovers. Ingredients

    1 1/2 to 2 boneless skinless chicken breast, cooked and sliced to small pieces
    2 1/2 c egg noodles, cooked
    2 cans cream of mushroom soup (use the healthy ones if possible)
    3/4 c non-fat milk
    1 c sweet peas (canned) unsalted
    1/4 c breadcrumbs for topping

Directions

Prepare chicken breast (cook if needed and cut up into small pieces).

Preheat the oven to 350 degrees.

Cook Egg noodles and drain.

Add egg noodles to a greased casserole dish. Mix in the chicken pieces. Add the soup and mix together. Then, add the milk and mix again, thoroughly.

Add the peas in last and toss gently. Sprinke the top with the breadcrumbs and bake for 45 minutes to 1 hour.

Serve and salt as desired at the table.

Makes about Six 1 cup Servings.

    Great recipe! I substituted cream of celery soup for the cream of mushroom, added diced onion and used frozen peas, and it really tasted like tuna casserole with chicken in it instead. I might even try it with a can of tuna sometime as actual tuna casserole. - 2/10/08

    Yummy! i used cream of celery too because I hate mushrooms, and used chopped up carrot and a little bit of spinach instead of peas. mixed in some shredded cheese too. might add corn next time. - 2/16/10
