Number of Servings: 8

Ingredients

    2 tablespoons extra-virgin olive oil
    4 chicken breasts, cut in cubes or thin slices
    Salt and pepper
    1 large onion, chopped
    2 tablespoons cider or white wine vinegar
    12 dried pitted apricots, chopped
    2 cups chicken stock
    1 cup apricot all fruit spread or apricot preserves
    3 tablespoons chopped flat-leaf parsley, for garnish

Directions

Heat a large skillet over medium high heat.
Add oil and chicken and season with salt and pepper. Lightly brown the chicken a few minutes on each side, then add onions. Cook 5 minutes.
Add vinegar to the pan and let it evaporate. Add apricots and stock.
When stock comes to a bubble, add preserves and stir to combine.
Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

    FABULOUS! The best recipe I've tried from SP so far, hands down! My family loved it and said it I could make every week. I didn't have dried apricots on hand so made it with just the apricot preserves and it was fine. I served it with a tossed salad and brown rice. What an easy, tasty meal! - 8/27/08

    I think this is a lot of calories. See the 8 servings for 344 calories in four chicken breasts. Most would eat one chicken breast, which would be 700 calories (without rice or anything else). - 4/28/10

    Isn't this Rachel Ray's Recipe?! If you use low-sodium broth or even homemade, it cuts the sodium even more. Great with brown rice! - 6/17/09

    As good as this is, I thought the amount of liquid was too watery and abundant to serve over rice. I added 10 more minutes of cooking time and boiled on med-low uncovered to evaporate some of the water but intensify and thicken to a sauce. FABULOUS!! Served over wild rice. - 6/20/09

    made this tonight for dinner, good , but not great! added a little ginger and garlic which helped,but needs something to give it a little kick! Next time I'll add a little hot sauce and less broth as there was a lot of liquid. will make again, but will play around with the ingredients . thanks - 4/30/10

    This is such a great recipe. This is the second fruit with meat entree I have found on this site. I have been so missing salt and herbs are not my thing, I am learning to use them more. Eating fruit is really exciting. Pineapples with pork , Apricots and chicken. DH and I love these combos. - 4/28/10

    Really, really good! It is hard to find low sodium recipes so this was a treat. I used water instead of chicken stock because I only had high-sodium broth. Flavor was good, nice combo of textures and tastes. My hubby hates chicken but he liked this! - 8/21/07

    Way too sweet-I would seriously cut back on the preserves.
    I would encourage anyone on a low sodium diet to calculate the sodium for yourselves-I don't think 200mg sounds right, especially when the recipe calls for added salt beyond what's in the broth.

    This is hands down the best low sodium meal I've made so far.

    I followed the recipe exactly and then used a slotted spoon to lift out the onion and chopped apricots. Served it with 60sixty recipe for Garlic Spiked Broccoli with Cranberries also a SP low sodium recipe. Husband best meal ever.

    I tried the idea offered by Butterflibaby72--fresh mandarin oranges with orange marmalade instead of dried apricots and preserves. I also used green onions in place of regular, and stirred in a tsp of corn starch to thicken the sauce a bit at the end. Nice! - 7/23/11

    Add some cooked chickpeas to the recipe and serve with couscous for a liberty-taking version of tajine. Dried prunes are another addition. Would work well with quinoa instead of couscous. (I'd be likely to skip the preserves, or at least use 1/4 cup.) - 6/19/10

    used what I had in pantry...1/4 low sugar apricot preserves, 1/2 cup dried cranberries, and 2 cups low sodium beef broth. Put over Quinoa, with a side of blanched asparagus. YUMMO. - 4/30/10

    Yum! My son and I are making this dish right now, and we have taste tested some of the sauce. We did add a teaspoon of soy sauce and half tsp of oriental hot sauce. Now it tastes like a good chinese dish. We also served over pasta instead of rice. Yummo! This is definitely a keeper. - 4/29/10

    We made this tonight and loved it. We used E.D. Smith Triple fruits Apricot with Peach & Passion fruit jam. I cut the amount of chicken stock down to 1 Cup and the jam down to 1/2 Cup - It is delicious. Will make this again. - 6/19/09
