Ingredients

    2 cups white flour
    1/3 cup unsweetened cocoa powder
    2 1/2 tbsp ground coffee
    2 tsp baking powder
    3/4 tsp ground cinnamon
    1/4 tsp salt
    1 cup sugar
    2 large eggs
    3 tbsp strong brewed coffee
    1 1/2 tsp vanilla extract

Directions

Preheat oven to 350. In a bowl of an electric mixer, combine flour, cocoa, ground coffee, baking powder, cinnamon and salt. In a seperate bowl, combine sugar, eggs, brewed coffee, and vanilla. Add the sugar mixture to flour mixture and beat on low speed. Divide dough into 2. On a lightly floured surface, use the palms of your hands to shape each half into a log about 15" x 1 3/4" x 1" high. Transfer the logs to greased baking sheet and pat down tops unti each piece is about 3/4" high and 2" wide. Bake until the logs are firm, about 20-25 minutes. Insert toothpick and make sure it comes out clean. Transfer logs to cutting board and let cool for 10 minutes. With a serrated knife, cut crosswize into 1/2 inch slices. (42 total) Arrange cookies in a single layer on baking sheet. Lower the oven to 300 and bake for 12 minutes per side, turning once. Transfer to wire rack and Enjoy!

    Really easy and good! I put 1/2 whole wheat flour and 1/2 regular so my consistency might be a bit different, but they were still delicious! - 1/17/10

    I only used 3/4 cup of sugar and it was still quite sweet; I would also make sure to use freshly-brewed coffee. I didn't especially like them, though my dad did. Be aware that the calories are low because it's half a biscotti-length, which is a trend I'm noticing on this site. - 8/14/13

    Really good. At first I thought they didn't have much flavor (and I added extra cinnamon and nutmeg), but the next day they were really good. And my husband loved them. Great with a cup of coffee and one cookie is actually enough for a cookie craving! - 12/28/11
