Ingredients

    3/4 cup dry lentils
    3/4 cup uncooked brown rice
    4 cups beef (or vegetable) broth (I use 4 cups water + 2 beef bouillon cubes)
    1 Tbsp. chili powder
    1 tsp. cumin
    1 tsp. onion powder
    1/2 tsp. garlic powder

Directions

Combine all in a pot and bring to a boil. Reduce heat to a simmer (about med to med-low) and cook until all the water is absorbed (it took mine about 35 minutes). Serves 4.

    This is quick and easy. I actually double it and freeze half of it. I used it in other recipes that call for taco meat (like casseroles) and it works out fine. You can even mix in some chorizo to this to stretch the meat a bit. Very versatile. - 2/6/13

    This is a delicious recipe. It makes a large amount and for my family it amounts to more than 4 servings. The best estimate for a serving is 1.5 cups of cooked lentils and rice. (For my family, we choose to eat about 1/3 of a serving. - 10/14/12

    This is a great and easy recipe for anyone wanting to try and cook brown rice, lentils or both! I stuck to the recipe, but can see this as a jumping off point for a number of different meal ideas. Thank you for sharing this! - 8/29/11

    Easy and yummy....but please remember....BEEF broth (even the bouillon cubes) isn't vegetarian. You can make this with veggie broth, though. :) - 4/9/11

    Delicious and filling.
    Been making a similar recipe for some time. This time I did it in the crockpot for Sunday lunch. I cooked it on high for 90 min. then turned it down to low before we left for church. It was ready when we got home 3 1/2 hrs. later. 6-8 hrs on low would work, too.

    This was really good! I sauteed a diced onion in olive oil, then added minced garlic, chili powder and cumin, sauteing until fragrant. Then the rest of the ingredients, using vegetable broth. - 3/13/14
