Ingredients

1 lb ground turkey
1 large onion
3 cloves garlic
1 zucchini
1 eggplant
2 cups cottage cheese
4 cups shredded mozzarella cheese
1 can pasta sauce
Directions
Preheat oven to 350.
Brown ground turkey. Chop onion and mince garlic, add to turkey while browning. Add sauce to cooked meat.
Using a 9x13 pan, add a thin layer of sauce/meat to the bottom of the pan.
*As you layer all the veggies add any desired spices such as salt, pepper or garlic.
Add first layer of eggplant.
Spread cottage cheese over eggplant.
Add another layer of sauce, a layer of shredded cheese, and then the second layer of eggplant.
Add layer of zucchini, cover with a layer of sauce and a layer of cheese.
Add final layer of eggplant, and cover with remaining sauce, and cover with final layer of cheese.
Cover tightly with foil and bake for 1 hour to an hour and 10 minutes. Uncover and bake an additional 10 minutes to brown top.

I had trouble with eggplant the one time I tried it, but have been wondering how to make a lasagna without noodles, so I am going to try this. I also wondered about the cottage cheese, but will try it with ricotta, and may add a couple things like the mushrooms and see if I can handle that. - 2/17/20

I love making lasagne especially when cleaning out refrigerator of small portions left over. I had a cup of cottage cheese left so I mixed with a cup of ricotta; added broccoli, shredded carrots, collard greens and black beans; 2 cups sharp cheese with 2 cups of mozzarella. No turkey added.
