Number of Servings: 6

Ingredients

    1 (15 oz.) can pumpkin
    1-1/2 cup reduced sodium chicken broth
    1 cup lowfat milk (2%)
    1 tsp ground cumin
    2 bay leaves
    fresh sage & popcorn for garnish

Directions

Mix first 5 ingredients and bring to simmer over medium heat. Simmer for 10 minutes.
Season to taste with salt and pepper.
Garnish with popcorn, fresh sage snips and pumpkin seeds.

    I will try this recipe. I cleaned my canned food cabinet and found a can that the best buy date was 12 so I will use it. I have all the ingredients on hand and will add the spices others suggested. I will great to eat during the cold wet winter. - 1/17/19

    The recipe as written was rather tasteless. I sauted some peppers and onions. I used pumpkin pie spice spice, cumin, cinnamon, and nutmeg. Instead of sage and popcorn I used bay leaves while it was cooking and whole wheat crackers. I'd make it again I'm sure. - 2/15/12

    Love how healthy this recipe is! It was a bit bland, so I added 1/2 tsp each of garlic powder and garlic salt and 1 tsp of rooosemhary. Yum! Oh yeah, I also used skim milk instead of 1%. - 12/8/11

    I took others advice and added onion and garlic, and felt it was OK but still somewhat bland so I added cinnamon which really made it nice. We will definitely make it again. - 1/15/11

    I made an individual portion of this to try without the bay leaf because I didn't have any. It was great, definitely a keeper and easy. I used 1/2 cp. canned pumpkin, 1/2 cp. mild, 1/2 cp. low sod ch. broth, 1/4 tsp cumin, 1/4 tsp oinion salt. It was very tastey. The cumin really gives it a nice - 1/26/08

    I actually didn't like the first few spoonfuls. I added a bit of onion salt so by the third spoonful, it was growing on me. I'm going to try it cold, I think to see if the flavors meld a bit more. It is very nutritious and calories can't be beat!! Thanks for submitting it. - 1/26/08
