Introduction

Spicy chicken with corn, tomatoes, and a kick of chili powder. Spicy chicken with corn, tomatoes, and a kick of chili powder.

Ingredients

    • 3 tablespoons olive oil
    • 6 skinless, boneless chicken breasts, cut crosswise into 1/2-inch wide strips
    • 3 14.5 oz. cans Mexican-style stewed tomatoes
    • 3 cups whole kernel corn
    • 1 tablespoon chili powder
    • 1/2 cup cilantro, chopped
    • salt and pepper to taste

Directions

1. Heat olive oil in a large, heavy skillet over medium-low heat.

2. Add chicken to the skillet and sauté until no longer pink, about 3 minutes.

3. Add tomatoes, corn and chili powder and bring to a boil.

4. Reduce heat and simmer uncovered until chicken is cooked through and sauce is slightly thickened, breaking up tomatoes with back of spoon, about 8 minutes.

5. Mix in cilantro and season to taste with salt and pepper.

Serves 6.

    Come on Spark Guys! Give it a break. The recipe was FINE .. .. just a matter of common sense in following it. Sounds real tasty & ahh-so-good for us too. A real prize for cold weather yummy dinners. In fact, this recipe is so good that I'll make it without changing it a bit. - 12/16/08

    My family and I loved this meal. It was a tad spicy for my sensitive daughter though so if youa re feeding kids keep that in mind. We used frozen corn since it did not specify. I agree the recipes could be more detailed. - 6/30/08

    Hmmm I looked at the ingredients details to see if it would say the chicken breast weight there. All the ingredients said 0! Is there a place on spark people recipes to make comments about changes they should make? I've had a few thoughts about features that would make things easier. - 6/19/08

    I agree that sometimes the recipes could be more specific. I hate when they say "cook until done". And yes, while it seems a simple thing, saying what to drain & what not to and how large an ingredient is, but it should certainly be part of the directions. It sounds good though. - 6/19/08

    The recipe should specify "how big" the chicken breasts are - 6 'boneless skinless chicken breasts' could be anywhere from 3 ounces to 12! And, i typically purchase already-cut-up chicken tenders. Try using no-salt tomatoes. Regular tomatoes (no salt) with chilis would be a good substitution - 6/19/08

    I think someone should have written in that the cans of corn needed to be drained before cooking. There was entirely too much water in the recipe. - 6/19/07
