Ingredients

    1 lb organic skinless chicken breasts (all visable fat trimmed)
    2 Tbsp olive oil - divided
    1 cup organic corn flakes, crushed after measure.
    1 tsp paprika
    1/2 tsp salt
    1/4 tsp black pepper

Directions

Mix dry ingredients in a shallow bowl. In a glass 8x8 pan, coat both sides of chicken with one tbsp of olive oil. Dip chicken into dry cornflake mixture coating both sides. Place coated chicken back in glass pan and drizzle tops of chicken with the remaining tbsp of olive oil. Bake in oven at 425 for 20 min, turn chicken and bake for additional 20 min or until juices run clear.

Makes 4 servings.

    Corn flakes are not gluten free unless specified as one of the preservative is wheat derived, I've been cooking wheat (gluten) dairy , egg and nut free for 5 years.... it's very daunting when you begin. There are far more products readily available nowdays, good luck xxxx - 1/14/10

    Note: the chicken must be thoroughly thawed or the flakes will not stick.

    I substitute a Toasted Rice Flake cereal for the Corn Flakes. We have some food sensitivities. Fabulous and crunchy...yummy. I have been cooking this type of chicken for 40 years. Any crushed flake cereal will work.

    Haven't cooked this yet but you can also crush up corn tortilla chips and use those. They have a different texture and flavor but it's an easy substitute if you don't have GF cereal. - 5/24/10
