Ingredients

    2 cups organic quinoa flour
    4 tsp baking powder
    1/2 tsp sea salt
    2 cups & 1 tb water
    2 tb vegetable oil

Directions

mix dry ingregients in bowl; add liquids; wisk to nix. Prehead pancake griddle. Spoon batter onto hot griddle making pancakes 4-5" across. Turn when edges seem dry (they won't brown much because they don't contain sugar). Keep warm while cooking remaining cakes. Batter may thicken as it stands, if so, stir in 1-2 tb water as needed. Makes 12 pancakes.

    I made my flour in my Vitamix (first time -so exciting) but as other members said below the batter was too thin and there was not binding agent so I added a couple tsps coconut flour and an egg. Pancakes still fell apart so I scrambled, added organic maple syrup & ate in a bowl. Taste was quite good - 9/9/12

    Qunioa flour is excellent, thanks for the suggestion. I added eggs and vegetable glycerine for binding and non-sugar sweetness and they were a fantastic treat. - 12/14/11

    Without sugar, milk (better yet buttermilk or kefir yogurt) & egg this recipe ended up tasting like baking powder. Also w/o egg the pancakes are fragile & take care to flip. I used 1c. quinoa flour, 1c. almond flour, 1.5c water, 3 tsp baking pwdr, salt, olive oil & resulting in good batter thickness - 5/7/11

    My calculations show this to be 302 calories for 4 servings so maybe you are using a different oil? But I made these this morning with a few changes, used 1 c quinoa & 1 c almond flour but hey were very watery so I added more almond flour & blueberries. - 8/15/10

    Very Good
    The taste reminded me of potato pancakes so I ate them with sugar free applesauce, fat free sour cream and sugar free raspberry syrup. Next time I will fry in large pan so they are not so thick, but enjoyed immensely. - 9/28/08

    I'm having a hard time finding quinoa flour. :( I may decide to add a small amount of sugar so that they look like regular pancakes or my kids won't eat them. - 3/14/08
